a healthy and tasty meal.

The ingredients for the dessert are 1 cup of citrus fruit yogurt, 1 cup of extra virgin olive oil, 2 cups of sugar, 3 cups of flour, 3 eggs, 1 tbsp of baking powder and the rind of one shaved lemon. Preheat the oven to 180 degrees. Place all of the ingredients in a bowl and mix well. Once mixed, bake for 30 minutes and then add icing if you like.

Carol Firenze, the author of The Passionate Olive, comments on cooking with extra virgin olive oil. “You can create harmonious flavors by pairing extra virgin olive oil with food. Use a mild intensity olive oil for dishes that require a subtle flavor, like fish, pesto, eggs or when baking. Use a medium intensity olive oil for dishes that call for fruity flavor enhancements, such as salads, grilled chicken, and vegetables. Use an intense olive oil for dishes that call for bold flavor, like pasta sauces, soups and grilled meats.”
